Brewery tours huh? You going to head into Downtown Syracuse? As I understand, there's a bunch of micro breweries there. I'm not a beer gal, but I've heard good things about Empire and Eastwood breweries. Syracuse is a college town after all, so gotta have good beer! My brother recently went to Local 315 brewery and enjoyed it. A friend of his highly suggested Prison City Brewery in Auburn (though that's a bit further south yet).

I've never been to either place to eat... only to party.
The Blue Tusk is the place to go if you want to just make ONE stop and taste it all. 69 different beers on tap (from what I looked up, this could be more or less since the article I read was written). I worked in an office across the road years ago and used to take my morning coffee break here to get an English Muffin or Bagel. I loved that they catered to the working crowd during the day, and thought the massive amount of taps was "pretty". I never saw anyone getting beer before noon. When lunch time came (as well as when the work day was over and we'd meet for drinks) we'd just take the elevator downstairs though to Mully's: http://mullys.com/
Most other places I've been downtown are not open during the daytime ... or weekdays. I haven't been to most of those places in quite a few years either. I much prefer my little country bars to the clubs now.
Also, if you're going downtown, you may want to either take the ladies to Destiny USA or try to steer clear of it, though there is an indoor go-kart track that can be fun when the waits aren't too long. https://www.destinyusa.com/directory/
