You can see often the "mariachi's" playing there instruments.
BUT, I am in particular interested in the VERY BIG GUITAR they use.
Where can you find (of course in Mexico) such a guitar, AND there must be fellow chordians, who are (I hope so) more familiar with this JUMBO, jumbo sized guitar.

I've seen a few of those being played but haven't had the opportunity to play one myself...they seemed to be used more as an acoustic bass than strummed as a guitar...it would be fun to try one...

They are called a gitarone they are essencially a bass as jaygordon75 mentioned. The maraichies use them a lot. You can find them in Los Angeles if you really want one.

Concerning Mexican guitars, I got one little one, just across the border in Arizona (near Tombstone) a name always linked with the CCR song TOMBSTONE shadow

Don't be TOO MODEST Boot, you do know a lot. I also know a lot, and we are probably infected by the AEGvirus,  not AIDS related, but very infectious virus.
A(coustic)E(lectric)V(irus) = creative isn't it.
I wrote once, that, chordians should come once together, but the problem is: $$$$.
The "where" and "when" is definitely no problem, the $$ will be. But if you, we, I know that this can be realised, it would be great. I am convinced that if 50-100 chordians can participate, it would be "magic".
HARD TO FIND OUT. A nice and not too expensive place would be LAS VEGAS, hotel prices are quit cheap, food isn't expensive at all, and who knows, they allow us to perform: 1 song, 100 guitars. Maybe we can be sponsored, I think about Ed Roman???
At least, I maybe a dreamer, but I'm not the only one, it is an interesting proposal.
