The best possible advice I can give you is don't assume that a named brand is better.  Its usually is but there are some fantastic guitars out there. Take your time, play it a few times. Look at the action, you'll appreciate it being lower when you improve and want to play higher up the neck!  listen for tones in the bass, middle and high strings. Do you want it for fingerpicking or strumming, home use or gigging with buddies.  Get the best possible guitar you can....the more you spend the better guitar you tend to get but obviously you dont need to spend thousands.  Beyond the obvious look at Takamines (very underrated) and Cort (some sounds are comparable with a Martin)....I  personally love the Ovation guitar. Of course you can't go wrong with Gibson and martin but they are pricey!.... But make sure you play them all, do it twice  and then decide! im not sure about Ibannez but compare against other and ASK the guitar guy in the shop for help...they are usually only delighted to show off and will help you avoid pitfalls!!

I would say use OPEN G, it so easy to tune to and sound very suitable for gospel as its widely used in the Blues......chords become so easy are are very lush.

My advice is learn the fingerpicking pattern VERY SLOWLY....play it when you watching telly, vegging on couch, at the beach etc. but eventually YOU WILL get it... and be able to speed it up....my favourite picking pattern is ...hold day an G or E chord

play both E strings together (use your thumb for low E and middle for the high E) /  then A and B one after each other / then D  / then E high and B........play that slowly and build up to speed.  you can vary it but pick one and practice it religliously.

Try not to use a pick as if you get your fingers moving together then changes and dual picking of notes will sound much more subtle!
