Barre 2nd fret,GB&E strings with pointer finger, middle finger on 3rd fret of the B string, then ring finger on 3rd fret of the A string. The C replaces the D as the  main root bass note so therefore it's OK to mute the D string. This will happen naturally with your ring finger as you're playing the 3rd fret of the A string.

You should "encourage" your child to play right handed if at all posible. You're gonna have so many easier avenues to persue as life as a right handed guitarist. Each hand plays an equal role so being "left-handed" isn't that big of an issue in learning the guitar, especially at 5 years old. Here are some possible purchase options for you;

Another fun word combo to say real fast, repetitvely, is "Toy Boat". Go on and give it a try, you know you want to..........  My late Grandfather had some fabulous takes on life. One I distinctly recall is this; "Son, if you wanna have a good, friendly, peaceful, visitin' spell with family or friends there's two things that don't get talked about. One is government and the the other is religion. I've tried to live by these words around people whom I am fond of and it seems to be, for me at least, a sensible life philosophy. No hidden message or meaning in this comment, just sharing some past experiences that improved my life.

Hello Old Doll,
Your festival last week sounded like a big hit. Way to go and congratulations. I was raised in Southwestern Virginia where traditional string music is widely popular. I now live and perform( live music) on the west coast of Florida. I refuse to use pre-recorded music in my act and that offers a counter-balance from what most of the performers do, thus I stay very busy. One of my Friend-fans brought a Bowed Psalter to one of my gigs. She's loaned it to me for a spell and I'm really diggin' this thing. Are you familiar with this beautiful instrument and if so do you have any advice/tips to improve my understanding of the "Bowed Psalter"?

Lessons are, more times than not, great. My musical experiences have taught me that the best way to learn and grow as a musician is to play with many, many different people. You may be better or worse than the person you're jammin' with but you can almost always learn somethin' from everyone.
As far as finding an instructor if you choose to go that route, is to go out and listen to some live music in your area. Determine which musician you dig the most and tell 'em how much you admire their musical abilities.   Ask them if they give lessons. This elimates a step in screening your instructor for compatibility with you and your musical aspirations. A good instructor won't be concerned about impressing you with their playing. They will, however, be concerned with showing you, as clearly and efficiently, in as little time as possible, how to improve and grow as a musician. The ultimate key to growth though is with the student and how much devotion to the instrument they give.

Pretty much all music is remotely, in some phase, intertwined. So "too busy" in your arrangements I don't see as a problem. It's your canvas so paint as much of it with as many colors that feel right to you.
I share jerome.oneil's view of not imitating songs but instead "interpretating" songs. A variation from the original recording is more times than not, refreshing and originally creative. And mixing styles(i.e. country>reggae) can make a typically boring song stand out in the listeners mind. Being able to "paint outside of the lines" is, in my opinion, a blessing and not a curse.  Just remember that pleasing everyone in a room is damn near impossible. So as long as the performer is happy and satisfied with their music, more people than not are gonna share your feeling of elation.  Jam on!!!!!!!!!!!
