After re-tubing my amp last week, I re-strung my strat style axe last night before rehearsal. holy crap. Sound flew out of that guitar. Reminder to me to restring more often.

I've been working from our Kansas City offices quite a great deal, and since I can't go for more than a couple days without playing (and since I hate traveling with my guitars), I purchased a fender 300ce from a shop here in town. Action is good, the tone is surprisingly deep, and it's overall a nice guitar to leave at the office.
Theremin update: I'm horrid at this.

I don't do strict nashville numbering...use my own lil' system that is pretty close. I would show that as bVI. Some of it depends upon the context of the song you're playing. Are these chords from a real song or just something you made up?
To your second question...there are a couple of ways you can do that. In classical type theory you can show a temporary modulation via a slash chord...so for your D7 above, you can show that as II7. You can also call it a V of V, meaning that D7 is the V chord of the V of C (G). That would appear as V7/V.
I think that this numbering system gets pretty cumbersome with modulations and non-diatonic chords, but maybe that's just me.

Home chord is the tonic. Seven bridges Road is an example of a song that is not written diatonically - but your analysis of the song is correct. The chord progression is I - bVII - IV. The lowered 7th chord uses a note from C mixolydian. Same thing in "can't you see."

For most western popular music the motion from tonic => subdominant => dominant and subsequent resolution back to tonic is a heck of a lot more important than the chord(s) that go along with your melody note in some mode or another. If this is what OP is looking for he'd be better served doing research on chord structure, substitutions and voicings rather than worrying about what mode a song's in.
In fact, the whole notion of modality is better thought of in terms of melody and scales vs. chord progressions. Consider a blues song in C that goes:
C7 F
C7 F G
When we talk about what key that song is in, we say C or C major. You wouldn't generally say "it's in the key of C mixolydian" because "C mixolydian" isn't a key. It's a scale.
However when I'm jamming with my guitar buddies I might say "here are the changes. Think C mixolydian when you're soloing."

A few months ago I purchased this little volume control that sits in my effects loop and allows me to drive the bajeezus out of my Deville 410's power tubes. I pull the volume back off in the effects loop and - WHALA! - smoking hot guitar tone without all the neigborhood complaints.
I've played this Deville (a very loud amp IMO) since college. Because of the fact that I've never had a power soak on it, the volume knob has never seen anything past 2.5. With my new upgrade it's singing along at 8-9 ish.
I'm noticing a really profound decrease in tube life. Before the power soak I would get years out of a set of power tubes. I noticed three weeks ago that it's about time to re-tube, which I last did in mid 2012. I suspect this is normal when driving tubes hard.
It's pretty amazing how much the sound of the guitar is changing as the tubes blow out. It went from slightly microphonic and feedback prone to very saturated. Now I'm starting to lose treble.
Wondering if anyone else has ridden tubes all the way out - what can I expect next? System failure? More fun with altered sounds?
